Aaaack! I bought gluten free bread by mistake! These days my favourite bread is “pan cristal” which is pretty much what it sounds like. Cristal bread, like a super light chapata with a thin crispy crust. It’s also about as far away from this sad soulless stodge as you can get. I mean just look at it. Anyhow, I’m sorry to say I tossed it, because I hate food waste, but I just couldn’t. Made some buttery noodles in self defence and ended up feeling so much empathy for coeliacs everywhere. As for the “gluten free” brigade who somehow think gluten is bad for them, they deserve every miserable moment they get from eating this crap.
It’s my observation that people who make a big deal out of avoiding things that don’t actually make them ill, because of something they read somewhere, are looking for a way to be special. On the good side, the armada of “I read it was bad for my blood type” people may have made life easier for people with actual celiac disease. I’ve only been aware of one such person in my circle of acquaintance over the course of a life, and that was actually the spouse of someone I worked with, so I’m guessing people who really have a problem don’t craft their identities around it.

I blame Gwyneth. I’ve had so many people on my tours tell me they are “gluten intolerant” and it ends up being just because they think they are. My friend Shaney is coeliac, finally was diagnosed (properly) a few years ago after she kept getting sick after eating. And she is the only person I know after years of meeting people from everywhere who is genuinely coeliac.
A couple of weeks ago I had someone who wanted to come on my food tour tell me she and her daughter are coeliac… and nope. I can’t take on that responsibility.
