A few hours ago these three taps were sitting out on my dining table and now… they are all where they should be! I’m so thrilled because the old taps here were a constant daily source of frustration and annoyance. As you can see, the new taps are not only bright and shiny, they are also clever.
Many thanks to Pablito, who did a great job. Afterwards I made his favourite dish – *my* carbonara – and we had a nice time eating and drinking wine and chatting.

I’m finding it amazing how much my quality of life has improved since last night. I mean, taps are things you use so often during the course of a day that, having crap ones, means that you get irritated several times a day on a regular basis.
I took a shower before I went to bed last night and what a difference. Better water pressure, better temperature control… heaven.

I actually don’t think my carbonara is any great shakes. But everyone who tries it loves it! As with all pasta dishes with a cream sauce it’s a fine line between “pasta with sauce” and “pasta has soaked up all the sauce”… and mine tends to be the latter.
If there is any “secret” it’s lotsa garlic, lotsa bacon and parmesan and serve as quickly as possible.

Oh, mine seems to always end up as “past with sauce”.
I don’t use cream in general, just a dash of white wine. Maybe cream sticks better to the pasta?
I also used to put a drop of oil in the boiling water for pasta cooking, but someone recently told me that not only didn’t it really bring much in terms of getting all pasta out of the pot when they’re ready, but that also prevents the sauce from sticking to it afterwards.

I’ve read that REAL carbonara doesn’t have cream in it, so yours is probably more authentic. I used to put a drop of olive oil in the water – maybe I should start doing that again when making carbonara so that not all the sauce gets soaked up straight away.

Truth be told, the wine-instead-of cream trick was revealed to me by an Italian.
Also, I suspect every Italian household has their own recipe for REAL Carbonara, some of which including cream 😉

The last time I had pasta with a carbonara sauce was in Houston Texas of all places, after visiting the space center. In my opinion, anything that contains lotsa garlic, lotsa bacon and lotsa Parmesan is going to be good.
