I know I seem a bit food obsessed these days but, let’s face it, the days have been kind of long lately. And now that it’s getting cooler it’s starting to be comfort food weather. I really must be careful not to regain the weight I lost after the first operation in May. But maybe just one salad filled bacon cup won’t do too much harm …

Oh. My. God. I must make those! I’ve got Shahee the raw vegan chef helping me out while I’m sick, but once I’m well I’m so completely living off salad in bacon cups!

Although I like not martha’s original BLT salad idea, I was thinking of maybe doing a caesar salad with homemade croutons in the bacon cups, or maybe one of my ‘famous’ arrugula (rocket) salads, with mushrooms & parmesan cheese. The possibilities are myriad, aren’t they?

Oh my God, I just stopped by over here after I checked my comments and I cannot believe my eyes. These are seriously beautiful in concept and execution, I think the arugula salad would be FABULOUS in a bacon cup.
Actually, what salad would not be improved by such a presentation? This has to beat the boring tortilla salad bowl for the taco salad and the bread bowl for soup HANDS DOWN.
We have a new computer since our old hard drive decided to crash completely. Oh Joy, Oh Rapture Unforeseen. The only down side is that at present we have no access to all our old email addresses, they are in hard drive limbo for some reason I cannot fathom.

I highly recommend cooking your bacon in the microwave. It is much safer and less smokey.
I put my bacon between pieces of paper towel which soaks up any extra grease and does away with splattering. I thought that it might be worth trying using paper muffin tin liners to form the bowls (in the micro, obviously). If you want to go bigger, you can use paper cups.

Just what I didn’t need to see! I had to give up so much when I was ill, and bacon was one of my favorite things; now I’ll be dreaming about it. Turkey bacon is Just Not The Same.
Lovely idea for a salad presentation, though. I wonder if it would work with slices of proscuito, draped over a form and baked? That’s a little bit leaner than regular bacon, but just as salty.
