
So I got some ginger. So now what?
Trying to do more anti-cancer diet stuff these days. Ginger is supposed to be very good for nausea and tumeric is touted as being a very effective natural anti-inflammatory. Have yet to start on the tumeric but yesterday I made a lovely chicken stir-fry with spring onion, garlic, mushrooms, lemon and ginger. So if any of you have a favourite recipe that uses ginger, please pass them along and I’ll try them out. Preferably some very simple dishes that I can make during the first ten days of my chemo cycle when the nausea is at its worst.

Hey there! Arrived via Coyote’s blog. Ginger recipes….hmmm. Stir-fries are awesome but what about ginger glazed carrots? A little sugar, some fresh ginger, a bit of flour and … voila! Oh, don’t forget the carrots, naturally.

One of my favorite pre-vegetarian things was a chicken stir fry with hard pears, sherry and fresh ginger, and a little black pepper and sesame oil at the end. I think I marinated the chicken with the sherry and slices of ginger for a quarter hour or so before tossing it in the hot oil.

Dal is nice, but not sure it’s a good thing for eating if you’re feeling nauseous.

I like to shave some ginger into fresh apple or orange juice. Gives it some zing!

Well, there’s always my Ginger Cake. But I think you said you don’t like sweets. However I think these Three Ginger Cookies with a cup of tea would be just the thing to settle a queasy stomach. They could be made before your chemo treatment, and frozen or stored for use as needed.

Hello and welcome, Karen! I think ginger glazed carrots sounds amazing and will definitely be trying those out. I’ve been really craving carrots lately, so this is perfect.
I didn’t know you were a vegetarian, Sled. That’s a nice stir-fry variation and sounds quick & easy to make. Will also give me a chance to use up some of the dry sherry that’s been in my fridge for ages.

Might try that in the organic apple juice I usually drink during the first 10 days, woo. Since I can only drink room temperature stuff I find apple juice (which I usually don’t like) is one of the few juices that works for me.
Not sure about baking in this heat, SS, but maybe I’ll be able to find some gingersnaps or something similar at the supermarket.
Last time I smoked marijuana I was about 17, ian, and it made me so paranoid that I never tried it again. I wonder if the effect is different when you ingest it with food.
This is my last day of chemo pills for this cycle. Soooo looking forward to ice cream next week (and I don’t even like ice cream much).

I just got to the point of not being willing to eat anything that once had any sort of organized consciousness — anything that could have ever looked at me and interacted with me, I guess. It’s visceral, one day I simply couldn’t do it.
it’s personal so I don’t hokk a tschaynik about it, and I remember some of those old recipes fondly; if I ever run across a good seitan or the like, I remake them.
Wish I could send you a lemon lavender sorbet from the frozen dessert place down the road.

Wow, that was quite overwhelming, Anne! I really like the look of the ginger dipping sauce (with the scallion and red onion pancakes). Very versatile.
Hmmm, I wonder where I could find crystallized ginger here … good suggestion, Puddock.

For the crystallized ginger try oriental food stores if they have them. It’s much cheaper in the oriental food aisle than in the spice aisle here in the states.

Ginger Ice Cram Pie comes to mind!
Fresh ginger, ginger juice, candied ginger, and ginger wafers…. It has it all!
Tools: Springform pan, spoon, spatula, 1 large mixing bowl, 1 small mixing bowl.
I take some ginger wafers (Ikea has a really good one!) and crumble them up (if you like, reserve enough to line the pan around the edge). In your small bowl put 1 1/2 c. crumbled wafers, 1/4 c. sugar and 6 tbsp. melted butter.
Line the bottom of the springform pan with the wafer mixture and press firmly. Bake at 350 for 8-10 minutes. Remove from oven and let cool. If you have decided to line the side of the pan with whole wafers, do it before you let it cool.
I use ready-made vanilla ice cream and let it soften until I can stir it fairly easily. Then I mix in chopped candied ginger, some freshly grated ginger and ginger juice (if I can get it, otherwise, put more grated ginger or powdered ginger which I mix with warm milk). I stir that all into the softened ice cream mixture.
Pour the ice cream mixture into the pan and smooth the top.
Place in the freezer until firm.
You might try adding some chopped pistachios to the mixture and sprinkle on top.
I have also added Cardamom, cinnamon, and nutmeg, as well. It is all good!
I have also made a green tea ice cream pie with a graham cracker crumb, as well.
If you can find powdered green tea (matcha), heat 4 tbsp. with 1/2 c. milk (make sure you don’t scorch the milk), cool, and mix that into the soft ice cream.

I also add grated ginger to ginger ale to make my own ginger beer, since it is hard to find and WAY TOO HOT for my taste!

Pot in food gives you a nice overall body buzz (or so I’ve been told 12th hand) π Plus it gives you an appetite.
My youngest daughter makes a delicious ginger carrot soup, really simple, grated carrots and ginger (about 3 or 4 to one in favour of the carrots). She uses an all around veggie stock but I imagine you could use any kind (maybe not fish!) and she spices it with cardamom and a dash or two of curry powder (or make the curry yourself and add more cardamom than usual). Salt and pepper to taste (the stock may have them) and simmer, don’t boil. I like it.
Get yourself some real ginger beer as well, it has bubbles that soothe as well as the ginger!

btw, it keeps a long time but you can grate the carrots and ginger and freeze them for later as well.
