Today I made this very comfort-foodie dish based on having tried it a few times elsewhere. It has some of the usual comfort food ingredients (potatoes, eggs) as well as some chorizo and spicy pimentón thrown in for good measure. And most enjoyable it was too!

But as comforting (and delicious) this late Sunday lunch was, when it comes to comfort food I’d probably say my favourites would include cheese. Like, mac & cheese or grilled cheese sandwiches.

My favorite comfort foods are macaroni and cheese, even the nasty boxed Kraft kind, and mashed potatoes. Mmmm. Just call me Carb Girl.

Corned beef, salad cream and ready-salted crisps on soft white bread. That’s a really dreadful sandwich nutrient wise but oh my goodness. The soft corned beef, the crunchy salty crisps, the squashy bread. It makes me so happy.
Luckily I don’t need that one too often.

Poached egg (very runny yolk) on toast squares. I toast the bread, butter heavily, and cut into small squares. I cook two eggs (poached or microwaved) and drop on top of the toast and stir until the egg coats the toast. Sometimes I add grated cheddar cheese, preferably old cheddar.
Bananas and potato chips. The bananas have to be JUST ripe so they are sweet and tangy. I pop some chips in my mouth and take a bite of banana. Sweet and salty. I don’t eat this often as we rarely have chips in the house.
Pasta with butter and grated Parmesan. Self-explanatory. Sometimes I chop garlic into it.
Red River Cereal…

Red River Cereal… With cinnamon and fresh ground cardamom. I have a pepper-grinder solely for the use of cardamom since I add it to so many dishes.
