Cheese is the food of the gods, and I fleer and scoff at many of my fellow fitness enthusiasts who adopt a superior attitude to it. (There is no percentage in pursuing strength and health if you believe you must live on cardboard.) The stinkier the better, but Manchego is nice — I had it for the first time at a winery here in Virginia, of all places.

At a market stall in Galway I bought a block of stinking white stuff billed as “goats’ cheddar”. The lady remarked that it was a stronger batch than usual. It was … impressive.
We still have some left. I’m not sure what I think of it, but my mother is going through it at a steady rate. She loves it.
It is white. No yellow tinge at all. Odd. Cheddar-like consistency, but stinks. And a powerful flavour. Would knock the top of your head.
