Been enjoying these two salads a lot this summer. The top one is a chopped guacamole salad which is simply chopping up the onion, tomato and jalapeños into a bowl, grating in the garlic clove with a bit of lime zest, s & p, then mixing well with a 50/50 lime/olive oil dressing. Add the chopped avocado and parsley, toss again and you’re done.

This one below is a roasted red pepper salad, but I “cheat” and use a jar of roasted piquillo peppers (and so can you 😉). Sauté 2-3 sweet onions with about 10 sliced garlic cloves in evoo, bit of s & p. Once the onions start to caramelise add the piquillo peppers, let that cook a bit and then let it cool down to room temp before serving. Great as a side dish or topping. Enjoy!

slawsFurther to my summer eating post, I came across this article in Saveur Mag the other day. I plan to try a whole whack of these babies and thought it would be a nice thing to share. That radish, cilantro and goat cheese one looks amazing, but they kind of all do.

salad daysLeave it to me to get a craving for salads as soon as the temperatures plummet (and it starts snowing on my blog!). But this past week or so, for no reason I can fathom, I am suddenly craving lots of crisp leafy greens with grated carrot, sliced onion and some chunks of high-quality preserved tuna (bonito). And when I say crave I mean that once lunchtime starts approaching I can almost feel the crunch of carrot and lettuce and taste the extra virgin olive oil with balsamic vinegar.

What the heck. I’m not going to question this. Of course it might be even healthier (or at least more slimmifying) if I didn’t accompany my salady lunch with a big chunk of pan gallego, but I’m guessing that having this fabulous bread option is what got me interested in salads again. Because really, what goes better with nice crusty bread, no matter what the weather is like? So I reckon I am now getting about 3 a day at lunch.

What’s your favourite way of getting enough veg in your diet?
