A quiet New Year’s Eve dinner at home. Loving the new oven. Roasted a couple of tiny lamb legs and am getting better at roasties too. But the most exciting (and delicious) part of the evening was making gambas al ajillo at home for the very first time. See vid below…

Later on watched the Madrid ball drop in Puerta del Sol on TV, raised a glass to the new year, and then headed to bed. How was your evening?

I was so excited to find the recipe for chef Shaun Searley’s amazing confit potatoes (pictured below at the amazing Quality Chop House in London) and decided to include them in my Christmas Eve dinner. Well, they ended up taking all of Friday evening to prepare, with slicing and layering and slow baking for three hours (!!). The final frying happens just before serving. I hope they turn out, but just in case I’ll have some back-up roasties. What are you making for Christmas dinner?

There’s been a fair bit of comfort food cooking going on this weekend at Casa Az. Yesterday I made some lovely leek & potato soup (must do that more often), and this morning Peter decided to make one of his puchero stews, this time with lentils instead of the usual white beans. However, he started off with the entire kilo bag of lentils (instead of half), which start off looking like the right amount, but soon grow. Oops.
So I came to the rescue, moved half his lentils to another pot, and made a tikka masala with lots of veggies (onion, garlic, courgette, tomato, spinach…). Lucky these will freeze well. I think this will be the lentil quota for the winter.

My idea of a great Saturday night (when I’m not working) is staying home, making some comfort food, and just chillin with the cats. Feels even extra decadent if I’m in bed before 10.30…

Well okay, it’s not COLD here yet, but I did have to start using a light blanket this week instead of just a top sheet. And I’ve started cooking again, rather than mostly making salads, tortillas, etc at home. This pollo al ajillo actually has lots of garlicky sauce under the rice and chicken… made this batch with just thighs. Am beginning to think that chicken breasts are highly over rated. Plus am totally hooked on courgetti…
