Today the Gastro Guías executive committee (don’t we sound posh!) met with Paco Ybarra and Claudia Guardiola from the Cruzcampo Foundation to to talk about possible workshops or courses that might be possible for our guides. Paco is the head chef of the foundation’s cooking school and Claudia is the foundation manager. It was a great meeting and we came away with so many ideas and, more importantly, we made another great contact that is keen on helping our association.
I mean, I already know Paco because he is also with the Academia Sevillana de Gastronomía y Turismo (we were both accepted as members at the same time last year) but I was surprised to discover Claudia is the sister of Jaime and Eduardo, both of whom I’ve known for ages. Really love the connections.
Step by step. I know we are going somewhere with this. I also know it’s been a steep learning curve for all four of us founding members and that in spite of some ups and downs we work very well together. Really proud to be a part of this whole adventure.

… especially when they are so pretty, and also seriously cut down on the FUCKING HEAT that has arrived here way too early. Stay tuned folks because the torrential rains all through Semana Santa gave us some breathing space, but if we hit over the top temps super early (like last year) the reservoirs won’t last long. Meanwhile tourists are complaining that they came here for some sun.

Con el aumento del turismo en ciudades como Sevilla ha surgido una nueva figura que adentra al visitante en los entresijos gastronómicos locales. Se trata de guías gastronómicos, una vertiente de la profesión que no goza del reconocimiento y el aval que sí tienen sus compañeros especializados en patrimonio. Por ese motivo acaba de nacer la Asociación de Guías Gastronómicos de Andalucía, cuya intención es poner en valor el trabajo que cada día elaboran estos cicerones culinarios.
With the increase in tourism in cities like Seville, a new figure has emerged that takes visitors through our local gastronomic intricacies. These are the gastronomic guides, an aspect of the profession that does not enjoy the recognition and endorsement that its colleagues who specialise in heritage do have. For this reason, the Association of Gastronomic Guides of Andalusia has been created, whose intention is to highlight the work that these culinary experts do every day.

What a great time at the 2nd Ecológica KoK Forum. I was able to attend a couple of the presentations on the second day and they were both super interesting. First up was a chat called “Cocinas del Mundo” with Juanlu Fernández and Marcos Nieto @canabota, Pedro González @kinu and Carloz González @elcevichano_es, moderated by Inmaculada Ruíz @iesheliopolis. Next Paco Ybarra @pacoybarram executive chef @fundacioncruzcampo gave a workshop on the traditional processes of fermentation with virgen sea salt: Colatura, Almorí and Garum.

I wished I could have stayed for more but I was happy to have made it to this excellent two-day event organised by my friend Mónica Trujillano @guiagastronomicaelcomensal. Impressive job, educational and entertaining. Well done Mónica! Looking forward to the next one. 👏👏👏
