I never actually plan meals with the idea that they are going to be vegetarian, but sometimes it just happens spontaneously. Like here. Had to use or lose three whole bags of baby spinach (oops) so I made my fabulous espinacas con garbanzos (with added chopped almonds!) and then I saw the portobellos were also on their way out and so it was a quick whole-grain basmati fried rice thing. And they were both delicious. What can I say? It was a fridge forage kind of day.

I don’t know why but it has been QUITE A WHILE since I updated Azahar’s Kitchen. I caught up with a couple of recipes last month and was shocked to see that previous updates had stopped over a year before that. Oops. It’s not like I’m not cooking stuff all the time but these days I often share my homecooking dishes on Instagram and then I guess forget about uploading them to the blog.
Anyhow with today being cold and drizzly, I felt the need for some comfort food and immediately thought of one of my favourite standbys – stroganoff – and realised that I had never published the recipe in spite of making it a gazillion times over the past couple of years. And so here it is! The original one I made – a mushroom stroganoff. Along with a few other variations…

I have never prepared and cooked white asparagus before so when I saw some this week at the market winking at me I thought I would give it a go. First thing is you have to peel these guys and then… well, I opted to just toss them in olive oil with s&p and some mixed herbs and give them the ol’ airfryer treatment. And they were just lovely . Made some crispy fried boneless free range chicken thighs too, served with my spicy salsa az. Not sure if I’d go out of my way to buy white asparagus again. What do you think?

When I was asking Big Al for oil sprayer advice (he’d just bought one for his new air fryer) somehow the topic of pepper grinders came up, how they never last, etc and he told me he’d stopped using them and uses a mortar and pestle instead. And then I happened to see this while I was out looking for a sprayer. Gotta admit it’s a bit more work, but at least it will keep on working as long as I do. 😉 And look! It fits perfectly in the spice cupboard next to my happy-making lazy susan.
