For some reason I haven’t come across any groups of orange harvesters this year, but I did happen across this skip outside the Patio de los Naranjos. Many people think these oranges are used for marmalade but in fact the city harvest (approx 6 million kilos from 50,000 trees) is not consumed due to its constant exposure to pollution. It’s used to make fertilisers, cosmetics, fodder for goats and, since 2020, to generate biogas, which is obtained from the juice and used to purify wastewater. Thus endeth the lesson. 🍊

It’s that time of year again. From December to March calçots are in season and during this time La Quinta Brasserie brings the Catalan calçotada to Sevilla. Over the years it’s become a bit of a tradition here at Casa Azahar. You can either order the full menu or just a “teja” (roof tile) of calçots to share and then order a la carte.

The calçots are similar to a large spring onion and are roasted over coals, then wrapped up in newspaper and served with a wonderfully nutty romesco sauce. Delicious and also messy as hell (La Quinta provided us with a paper bib and also black latex gloves for this procedure). The trick is getting the non-charred soft delicate centre out. First you peel away a bit of the charred bit at the end until you see the green part of the onion. Hold onto that! Then tightly grip the tip of the calçot with your other hand and pull.

After that you dip the calçot into romesco sauce, another Catalan dish made with tomatoes and roasted red peppers, puréed and thickened with toasted crushed almonds and bread. Heaven.  After dipping the calçot into the romesco you are meant to tip your head back, hold it high over your mouth and slowly lower it in. So good, and also lots of fun.

Or well, he was back for a few short hours. JosĂ© Pizarro and entourage showed up in Sevilla on Wednesday afternoon to do some filming for a new project he is working on. I met up with them in barrio Santa Cruz and we headed to Casa Morales. Had a nice visit and met his sous chef and the rest of the gang while JosĂ© was filmed chatting with Reyes Morales (Casa Morales) and Carmen Aumesquet (Sherry Council)… and just like that they were gone! Heading to the Cádiz coast. Hasta la prĂłxima!

Here is the weekly Wednesday antigen test. Once again looking good. But today someone told me that doing a test every week when I have no symptoms seemed excessive since there is no protocol in place for doing so. What do you think? I think most “official” protocols are politically-based, rather than science-based. I also think that taking a weekly test isn’t just about me feeling safer, it’s also about being responsible, for my clients and also for my flat mate, now that I am sharing my home again. And now that the price of a test has been government regulated to just under 3€ it’s not exactly a financial issue, and it only takes 15 minutes.

My feeling is that people so desperately wanting to get back to “normal” haven’t yet grasped the fact that that ship has sailed, and that “living with Covid” means that many things that were normal before are going to have to change and will probably be changed forever. I’m okay with that. Why wouldn’t I be? How about you?
