The Cuatro Palmas (four palms) is an annual limited selection of a small number of the very best casks of Tio Pepe Fino sherries from Bodega González Byass in Jerez de la Frontera, which are usually publicly presented to the sherry and hospitality trades and selected press in November.

This year’s selections will be made later this week by Antonio Flores, Gonzalez Byass’ master winemaker, and master of wine Peter Liem and, as always, will be bottled “en rama”, without filtration or clarification.

I was fortunate enough to attend a tasting of these incredible wines at Andalucía Sabor, called The Ages of Tío Pepe, which included the “mosto” from this year’s harvest, Tío Pepe en rama (bottled last May) and the four different Palmas. This past July Cuatro Palmas won the International Wine Challenge “Champion of Champions” Trophy and the title of Best Wine in the World.

The tasting was led by Antonio Flores with his usual blend of passion and poetry. Truly one of the most charismatic of “sherry whisperers”, Antonio took us through the six ages of Tío Pepe from “infancy” to “wise old age” and had us compare each age with the previous ones to appreciate the development of each stage. A delicious and educational process. Looking forward to trying this year’s selection.

  • Una Palma is a 6 year old Fino selected from three casks, out of a total of 142, that exemplifies the evolution of the style.
  • Dos Palmas is an 8 year old Fino selected from just two casks out of 150, reflecting the elegance of a well aged wine.
  • Tres Palmas is a 10 year old Fino selected from a single cask at the limit of the biological ageing process.
  • Cuatro Palmas iis a Fino that has passed to being an amontillado, and is selected from one of just six casks that have been ageing in González Byass for more than 50 years. It reflects the ability of Tío Pepe to evolve over time. Only half the cask is bottled.

How cool is this? It’s the ceiling of the patio inside the uber-cool hotel where my friend Javi Abascal has just relaunched his restaurant Lalola Taberna Gourmet. When I was there last week we not only had a fabulous time trying his new menu, we also talked about the possibility of me giving my wine tastings there. Turns out it’s perfect because it’s quite central and there’s a section of the restaurant that can be closed off for me, though for the most part the tastings will be held outside of usual dining hours.

We talked about what wines I wanted to present and he is going to organise the food, so that we have great little snacks to go with the wines. I’m really excited about this. I would actually love to do more tastings. So fingers crossed that these will start taking off!

Twitter pals Joel & Kelly first came to visit in 2013 and this week they are back! We met up for a quick sherry and then headed to La Barra de Inchausti for some serious fish and seafood. A lovely evening catching up (and sharing cat pics – they also have three!). Hope to see them again on Sunday before they leave.

This weekend the Consejo Regulador’s Sherry Academy was holding one of its wonderful “sherry 101” tastings in Jerez, this time featuring the Premium range by Harveys, so off I went for a quick Jerez Getaway, which included lunch at the marvelous Mantúa, but more on that later.

Poor Harveys Bristol Cream has suffered from a bad rep over the years, largely due to grannies pouring a glass of it at Christmas and then leaving it in the cupboard until the next Christmas. And frankly, any wine would be undrinkable kept in those conditions. In fact, the cream style of sherry was invented by Harveys and, unlike most creams which are a blend of oloroso (75%) and PX (25%), Bristol Cream adds fino and amontillado to the recipe, making it a more complex wine than the others. Recently the iconic blue label has had a makeover. The new bottle features a thermochromic ink logo, which changes colour as it hits the perfect serving temperature. When the sherry is cold and ready to be poured, the Harveys logo on the label will turn blue.

All the wines were excellent, with possibly the amontillado being my favourite… tough call. And as always, the presentation was interesting and informative. The monthly tastings, excellent value at 12€, start up again in October.

Harveys was founded in Bristol in 1796 by merchant William Perry. During the 19th century, Harveys became one of the largest importers of sherry from the Bay of Cadiz to the port of Bristol. Harveys Bristol Cream, created in 1882 by John Harvey II and his brother Edward, is the result of a meticulous selection of over 30 blends of Fino, Oloroso, Amontillado and Pedro Ximenez grape. It is aged in American oak casks using the traditional system of soleras and criaderas and is a global icon of sherry.
