Not my usual Wednesday! José Luis Pastrana, chef at brand new Balbuena y Huertas in the soon to be opened Cavalta Boutique Hotel (5 Star GL), got in touch on Instagram to ask if I would like to try their tasting menu. And so after the usual clarification that I don’t accept invitations in exchange for publicity (fine by José Luis, he said he preferred it that way) I asked pal Fiona Flores if she wanted to join me. Lately we’ve become quite a good team when it comes to visiting new restaurants, hotels, etc.

The meal, as you can see below, was quite spectacular and lunch lasted until almost 6 pm, after which we were given a tour of the hotel, which is set to open in a couple of weeks. The six-course tasting menu is actually very good value at 38€ (53€ with wine pairing). The meat course was swapped with tuna for pescatarian Fiona and were given a few cocktails too, with and without alcohol. I remember being so excited when my first ever article for Decanter Magazine was published (in print) for their March 2019 Spain issue. Later on it was also published online. But of course it’s been a while and there have been a lot of changes happening here and everywhere, so finally I was asked to update my piece and, well, here it is!

A couple of weeks ago I ran into a friend of mine enjoying snails outside a very popular snail bar (they’re in season now) and he was with a pal who happened to be a chef at a restaurant I wrote a rather scathing review about a few years ago (2013, this chef wasn’t there at that time). Anyhoodle, I took a pic of them and posted it on my Instagram and the next day got a message from the new owner of this place, asking me if I’d like to come and have a meal to see if I might enjoy it better than last time. I said sure, I mean why not, and then asked if I could bring a friend. And so I brought my friend Fourat with me, the same person who had been with me at that last disastrous meal back in 2013, it just seemed fitting. Fourat thought so too.

So today we showed up for lunch and it was lovely. Since Covid the new management (brother and sister team) has redone the whole place, including the menu, which now has a few Peruvian influenced dishes as Pedro has spent years in Peru running a restaurant there. It looked like a very interesting menu.

Gotta say, the main ISSUE of the previous visit had been the absolutely appalling and frankly rude service. It was only when I saw Fourat’s jaw drop open at one point after an especially rude bit that I knew I wasn’t just being over sensitive. We paid. We left. We never went back. Because you can have the best food in the world (and trust me, this wasn’t that) but if the service sucks then so does the entire experience.

Of course today we were going to get the VIP treatment, so I was mostly focused on the food. Which was excellent. Original takes on traditional dishes, the aforementioned Peruvian ones, lovely lemon and cava sorbet for dessert, all of which left us wanting to come back and try more. I really appreciate that Pedro got in touch because of course things change and he gave me – and Fourat – the chance to take another look.

I am so happy for my friends at Cañabota for winning their first michelin star. It’s not really my thing (going to michelin star restaurants) but they are understandably over the moon so I find myself caught up in their joy. I’ve known Juanlu for about ten years, have watched his progress and have seen how he and his amazing team – including chef Marcos, sous chef Javi and Juanlu’s father Pepe –  have stuck together through good times and bad. A lot of hard work and dedication has gone into making Cañabota what it is today. Now I just have to see if I can get a booking for my birthday…

salvamos la hosteleria

First off I want to say that of course I support the bars and restaurants here, many of which I love like my own second home and the people who own and run these places are like my family. And there are plenty of others that I respect and enjoy visiting. BUT… I have always felt it was my right to express my personal opinion about any of these places because, well, why not? It’s not like I’m anybody important.

But the ironic thing is that, since Covid, you are suddenly not allowed to say anything critical about any bar or restaurant because they are suffering, under pressure, doing their best, etc, etc. Well, I call bullshit.
